I’m always looking for quick, healthy and fun after school snacks that are great for kids and adults alike. Banana “sushi” is a fun idea I’ve been stalking on Pintrest and decided to give it a fresh twist. My five year old gobbles these up as soon as they’re ready! Bananas are actually pretty healthy. They’re loaded with potassium, fiber, including resistant starch which can feed the “good bacteria” in your gut. Read more on why bananas are so good. Combining protein with carbohydrates is a perfect way to extend the energy releasing potential from these foods and slow the rate of sugar absorption. Almond butter, chia seeds and sunflower seeds all contain protein!
This fast and fabulous snack can help boost brainpower during that mid-afternoon sluggish time at the office or post-school energy crash and even curb pre-dinner appetite when we tend to graze.
