Every once in a while I get a craving for a more tart and refreshing juice, and here it is! I usually like to use many more vegetables than fruits in my juices to keep the sugar down and the micronutrient value way up. This juice is lower in sugar, and is also jam-packed with nutrients thanks to all of the wonderful green vegetables that are in it. If you want this juice slightly less tart you can reduce the amount of lemon and ginger to half of the recipe (1/2 peeled lemon and 1-inch ginger), you can also cut either the lemon or ginger out completely.
