Fresh salads are a staple of warmer weather, and with the arrival of spring and the approaching summer season, there’s nothing better than a fast, fresh salad for lunch or dinner. The ingredients in this salad came fresh from a local farmers market, which means that they are less likely to contain dangerous pesticides and are likely to contain more nutrients. Farm-fresh vegetables are picked closer to the time they’re purchased and consumed, and therefore are more likely to contain higher levels of nutrients. When possible, seek out local farmers markets for the freshest produce.
Fresh spinach is a great base for any salad and is loaded with vitamins C and K, as well as beta carotene, fiber, and some iron and calcium. When paired with fresh apple thats loaded with fiber, the antioxidant-rich goji berries and the avocado that’s rich in anti-inflammatory healthy fats, this salad becomes a nutrient-boost to any meal or on it’s own. And it’s also super tasty.
Optional: garnish with fresh parsley.
